Gabriel holds a degree in Civil Engineering from UPM and began his early career in France as a consultant for EDF on major engineering projects, initially as a data analyst and later as a Project Manager.

In 2018, driven by a strong desire to start his own venture, he decided to make a career shift and return to Spain to establish "Nice to eat you" later rebranded as Coometas. Since then, he has served as the CEO, successfully mobilizing over 1 million euros to enable 3,000 vulnerable families to do their weekly shopping directly at local businesses, thus preventing "food queues" in NGO. In 2021, Coometas was recognized by the UN as one of the top 50 business initiatives for transforming food systems.
